FONDANT CAKE MENU

This menu is designed for cakes decorated in fondant. The pictures below show some examples of fondant decorated cakes.

Fondant is a thin sugar paste which is layered over an undercoat of white chocolate ganache. The ganache helps to seal in the cakes’ freshness and creates a smooth surface for the fondant. Inside are layers of cake sandwiched with classic buttercream (also known as American buttercream) flavoured with delicious ingredients to create a cake that you and your guests will love.

Traditional Brandy Soaked Fruit Cake with 70% Cocoa Dark Chocolate Ganache 

If Christmas cake is your thing, don’t be afraid to share this with your guests - I’m sure they love it too! This cake consists of mixed dried fruit soaked in French brandy and spices and is baked well ahead of your event so it has time to mature. I adore this with a chocolate ganache - it’s the perfect marriage - but if you wish to save your fruit cake tier, the chocolate ganache can be replaced to extend the shelf life of your fruit cake
